In 2020, COVID-19 home seclusion led to an increase in at-home consumption. As consumer foodservice outlets closed their doors for much of the year, and consumers were forced to spend more time at home, there was a rise in home cooking throughout Canada.
After a year in which usage of pasta sauces increased in 2020, with growth driven by the COVID-19 restrictions introduced in this year, and pasta being a popular dish for home meal preparation, this category recorded a decline in sales in 2021, as consumers spent more time outside their homes and had less time for home cooking. This negatively impacted unit volumes of glass jars used in the packaging of pasta sauces in 2021, although the smaller pack types of thin wall plastic containers and metal food cans continued to grow in 2021.
Flexible packaging, chiefly flexible plastic and flexible paper/plastic, was growing in the latter part of the review period in sauces, dressings and condiments, albeit remaining relatively niche. Flexible plastic, which recorded particularly strong unit volume growth in 2020, is mostly used for powdered products, including dry sauces and herbs/spices, with some usage also in barbecue sauces and cooking ingredients.
Salad dressings is set to record positive growth over the forecast period, driven by the growing health and wellness trend in Canada, which was given further impetus by the COVID-19 pandemic. This will benefit the unit volumes of PET bottles and HDPE bottles used in the packaging of salad dressings over 2021-2026, although usage of glass bottles will be stagnating or even declining, seeing this pack type lose its position as the leading packaging in salad dressings to PET bottles.
Over the forecast period, glass is expected to lose share to rigid plastic in sauces, dressings and condiments packaging. This trend will be seen in table sauces, for example, where the switch to rigid plastic pack types makes products easier to use and less breakable.
