In 2021, packaged leavened bread will perform well and much better than that seen in 2020. Consumers have been preferring to purchase smaller sizes daily, as they can now leave their homes more freely as home seclusion is no more.
As a result of the COVID-19 pandemic, many consumers have seen their disposable incomes shrink. As a result, volume sales of bread have increased as bread is relatively low priced and consumers on a low budget are more likely to eat cheaper products.
Growing health awareness amongst local consumers in Belarus, and the consequent decline in the consumption of products with a high fat and sugar content, is affecting the consumption of baked goods in 2021. For example, within sweet baked goods consumers tend to prefer to purchase pastries than cakes, since they are smaller, are considered to be a healthier option, and offer a wide product variety.
In the first stage of the forecast period, consumers are expected to continue being cautious of their spending. This is an ongoing result of the economic downturn and disposable income decline due to the COVID-19 pandemic.
Over the forecast period, there is expected to be many innovations seen within baked goods, largely surrounding the growing health and wellness trend. For example, local players are expected to launch tortilla bread, which is considered much healthier than more traditional bread.
As a result of the ongoing economic repercussions of the COVID-19 pandemic, artisanal baked goods are expected to be negatively impacted in the first stage of the forecast period. However, this situation is expected to change alongside the economic recovery in 2023 and beyond.

Baked Goods
This is the aggregation of bread, pastries, dessert mixes, frozen baked goods and cakes. Note: Baked goods from in-store bakeries are classified under unpackaged/artisanal, not packaged/industrial. While they may be finished on-site, they are often prepared, then frozen or par-baked, at other locations. Such production models are very important for supermarket in-store bakeries, which have in the past been used to drive traffic and fill stores with appetising aromas, but for which the labour resources required to run a full-service scratch bakery are not always available.
