In 2020, for much of the year cafés/bars were restricted to offering only home delivery services in order to reach consumers who, in turn, were subject to long periods of home seclusion. As such, the rate of home delivery orders for breakfast items (such as syrniki or croissants) increased considerably in 2020 as consumers wanted to eat their favourite café products from their own homes despite the disruption of the COVID-19 pandemic.
Using its successful franchising model, MKAR!Fest engaged in a rapid expansion plan in 2020. The major player in bars/pubs expanded its Pyana Vyshnya chain considerably in 2020, supporting a substantial increase in value share for the company.
Although chained bars/pubs recorded the least severe drop in foodservice current value sales in 2020, independent bars/bars suffered much more from the effects of COVID-19. Chained bars/pubs such as MKAR!Fest and Bilyy Nalyv pursued their rapid expansion plans in 2020 and continued to target young consumers who were less afraid of infection, but independent players in bars/pubs were lest prepared to withstand the difficult economic conditions during the COVID-19 pandemic.
Fixed price formats have proven to be successful over the review period with a number of entrants following this service format emerging in limited-service restaurants and bars/pubs. Bilyy Nalyv, for example, is a fixed price cider bar, where all menu items, including cider, oysters, hot dogs and pies, have a small price tag of UAH29.
Specialist coffee and tea shops was one of the top performing categories in cafés/bars over the review period and will remain an attractive option for consumers and a fast growing format in Ukraine over the forecast period. The growing coffee culture in the country underpins the fast-growing development of this format.
When cafés/bars are permitted to reopen, albeit with limited capacity, many players in the category will focus on optimising their space by introducing different uses for their outlets at different times of the day, encouraging a wider range of clients. This move will help players to maximise consumers, bearing in mind the restrictions on capacity as a result of the need for social distancing going into the forecast period.
