In order to retain the loyalty of customers during the lockdown, and especially after the restrictions and quarantine measures were eased, full-service restaurants looked to engage and communicate with consumers through social media platforms.
The demand for home delivery grew strongly in 2020 as foodservice operators and consumers adapted to the COVID-19 situation. The creation or extension of home delivery and/or takeaway services allowed full-service restaurants to maintain some revenues streams during lockdown and amid general quarantine and social distancing restrictions.
Outlet closures are likely to continue in 2021, especially in Q1. The main reason for closures remains the difficult economic environment and adverse financial conditions caused by steep losses and disrupted revenues in 2020.
An omnichannel strategy is set to be one of the key development areas over the forecast period. Operators of full-service restaurants are predicted to focus not only on home delivery and takeaway, but also on selling their products to grocery retailers and via the B2B channel.
There is expected to more cooperation between full-service restaurants and grocery retailers in order to cater to the changing needs and behaviours of consumers in the forecast period. Nonetheless, larger grocery retailers are likely to emerge as stronger alternatives to full-service restaurants.

FSR (full-service restaurants) encompasses all sit-down establishments where the focus is on food rather than on drink. FSR is characterized by table service and a relatively higher quality of food compared to quick-service units. Menus offer multiple selections and may include breakfast, lunch and dinner. Preparation of food products is often complex and involves multiple steps. NOTE: restaurants types catalogued in this segment refer to table-service only (outlets with a proper “full table service:” wait staff attending customers and taking orders at the tables). Outlets with “limited table service” are excluded from FSR. For example: outlets where customers order their food at the counter are excluded (even though the waiter will then bring the food at the table).
