Demand for pulses notably increased in 2020 due to stockpiling as a result of home seclusion with restrictions in place linked to the pandemic. Peas, followed by beans, is the largest volume category due to its affordability and versatility in terms of use in local dishes including home-prepared soups.
Product positioning in terms of healthy options and convenience continues to play an increasingly important role in pulses. This especially drives the smallest volume category of other pulses which continued to post positive dynamics in retail volume terms in 2021, despite its higher than average unit price.
Peas and beans are expected to post slow but stable retail volume growth rates over the forecast period compared to more dynamic performances by foodservice and institutional channels as consumers gradually resume busy lifestyles. The main reason is that fact that both categories are fairly mature and traditional while consumers want to add some level of differentiation as they search for new solutions to add excitement to their home-cooked dishes.
A negative development factor for beans and other pulses will be the growing competition from the further development of processed options. In line with demand for time-saving convenience, local consumers are increasingly searching for ready-made meal solutions, whilst at the same time opting for exotic and unusual flavours that add excitement.

Pulses
This category is limited to leguminous crops harvested only for dry grains, excluding crops harvested green for food (green peas, green bean, string beans, etc), which are considered to be vegetables and are included in other vegetables category. Also exclude those used mainly for the extraction of oil (eg soybeans) and those leguminous crops such as clover and alfalfa, which seeds are almost used exclusively for sowing purpose. This is the aggregation of dry beans, peas and other pulses.
