COVID-19 is expected to rejuvenate sauces, dressing and condiments with healthy value growth in both retail volume and current value sales. This compares to minimal growth in 2019.
Local manufacturer Olinesa maintained its narrow overall lead in sauces, dressings and condiments in current value terms in 2020. This was mainly due to its strength in table sauces, where it is placed second with a broad portfolio that covers key product areas such as mustard, ketchup, mayonnaise and other table sauces.
Pickled products have been performing well over the review period and Bulgarians continue to enjoy traditional, local pickles. While pickles are also often home-made, with urbanisation and busy lifestyles, consumers increasingly want their pickles ready-made and the range of pickles on the shop shelves is expanding to cater for the increased demand.
Though sauces, dressings and condiments performed well in 2020, it is expected that once the threat of COVID-19 subsides and that people are able to move around again and foodservice opens up, that value growth in sauces, dressings and condiments will return to much lower levels. In fact, it is expected that value growth will be negative in 2021.
Local producers will continue to dominate sauces, dressings and condiments over the forecast period. With the exception of products like stock cubes and powders, dry sauces and cooking sauces, where Nestlé, Unilever and Heinz dominate, the domestic manufacturers will lead in the biggest product areas such as herbs and spices, mayonnaise, pickled products and dips as well as tomato pastes and purées.
Dry sauces has not performed well over the review period, in terms of current value growth and the negative trend is expected to persist throughout the forecast period. Demand will continue to be undermined by the growing consumer preference for wet cooking sauces and other types of cooking ingredients that are perceived to be healthier.
