Retail demand for sauces, dressing and condiments increased strongly in Poland in 2020, as foodservice outlets remained closed during the COVID-19 lockdown and a large proportion of the local population was forced to stay at home. This increased at-home cooking, which is expected to translate into good volume growth in cooking ingredients such as bouillon, herbs and spices and stock cubes, which can be used to make cost-efficient and wholesome soups and stews.
Unit prices for sauces, dressing and condiments are expected to increase slightly during COVID-19 pandemic as a result of disruption to supply chains and distribution channels, with a significant price increase in mayonnaise in particular, due to declining popularity and more expensive raw ingredients. Mayonnaise is also considered by local consumers to be a seasonal product, with sales highest at Easter and Christmas.
International companies Nestlé Polska SA and Unilever Polska SA are expected to continue to lead sauces, dressings and condiments in value terms in 2020, thanks to the widespread availability and strong promotion of their well-established brands such as Winiary (from Nestlé) and Knorr (from Unilever). These brands are a vital part of the competitive landscape in many product categories and large corporations are better able to withstand some of the economic shock of the COVID-19 pandemic.
Growth in sauces, dressings and condiments is set to slow down in Poland in the first year of the forecast period, as consumer stockpiling dwindles, foodservice establishments reopen and travel restrictions ease. However, the following years of forecast will see a return to pre-COVID growth, with a slightly higher CAGR than that seen during the review period.
A saturated and mature category, table sauces is expected to record a decline in retail volume terms in 2020. Commonly known table sauces such as ketchup and mustard lack innovation and are unable to generate significant growth.
Cooking sauces and pasta sauces are also expected to record strong growth across the forecast period, partly thanks to improvements in product variety and quality. Developments in more convenient packaging, such as doypacks, are also expected to confer a competitive advantage.
