Growth in retail current value growth of sauces, dressings and condiments will accelerate sharply during 2020, with COVID-19 the main driver. Dry sauces, pasta sauces, tomato pastes and pureés and soy sauces were the biggest beneficiaries from COVID-19.
COVID-19 aside, the main longer-term drivers of retail current value sales growth in sauces, dressings and condiments are convenience, the home cooking trend and rising interest in exotic and ethnic flavours. Consumers are also shifting towards more natural ingredients.
Nestlé Suisse SA is the leading player in sauces, dressings and condiments, due in large part to the enduring popularity of its Thomy brand. Nestlé Suisse SA has extended its Thomy range with 24 new products, including chilled salad dressings, chilled dips and premium cooking sauces in exotic flavours.
While the exceptional performance of 2020 will not be matched, sauces, dressings and condiments will continue to post strong growth in retail current value sales over the course of the forecast period, with pasta sauces, barbeque sauces, chilli sauces and other table sauces the top performers. Health and wellness will remain a key driver: ‘Free-from’ products with organic or locally sourced ingredients will become more popular, while vegan sauces are expected to go mainstream, with Unilever Schweiz GmbH ‘s Knorr brand particularly well placed to tap into growing demand for plant-based dried sauces and dressings.
While hypermarkets and particularly supermarkets continue to account for the bulk of retail current value sales of sauces, dressings and condiments, discounters are gradually gaining ground. This trend is forecast to deepen during the forecast period, as Lidl and Aldi continue to grow their store footprint in Switzerland and local consumers become more comfortable with this format.
The Nutri-Score food labelling scheme, which was adopted by Nestlé Suisse SA during 2019, is intended to make it easier for consumers to distinguish between ‘healthy’ and ‘unhealthy’ products. It is expected to have a growing impact the purchasing habits of Swiss consumers in sauces, dressings and condiments over the course of the forecast period.
