As ketchup and mayonnaise are the largest categories in table sauces, the competitive landscape is relatively saturated and suffer from weak demand from new generations. Consequently, large brands are trying to refresh the image of traditional table sauces by targeting younger consumers.
Cooking sauces sees an increase in retail value sales due to new product development that is more convenient to consumers which helps to diversify everyday meals in 15 minutes. For example, the brand Pripravka (SPS PP) successfully launched a range of frying pan sauces during the review period.
Table sauces such as soy, chilli and other table sauces as well as ketchup and mustard, to a lesser extent, benefit from home seclusion and decreased incomes and see an increase in retail value and volume sales in 2021. Table sauces also benefits from limited travelling as many Ukrainians picnic and barbeque more often as this leisurely activity is still available to them despite the COVID-19 restrictions.
Sauces, dressings and condiments are expected to see a decline in constant retail value sales during the forecast period overall, but this is due to an anticipated fall in sales of mayonnaise as a result of the large increase in unit price in 2021. Nonetheless, dips is likely to see a modest increase in constant retail value sales growth thanks to products such as hummus and baba ghanoush that are growing in popularity.
Although constant retail value sales of salad dressings is likely to stagnate during the forecast period, it is anticipated to see a rise in consumer interest. Furthermore, other table sauces is expected to see weak constant retail value sales growth in the short term, but sales are likely to strengthen in the medium term.
Premiumisation of sauces, dressings and condiments is likely to occur during the forecast period thanks to large brands shifting to glass bottles. For example, in November 2020 Veres added a ketchup made from fresh tomatoes in a glass jar to its assortment and Torchin (Nestlé-Ukraine TOV) now has smaller 230g glass bottled premium other table sauces.
