Compared with the level of its foodservice value sales 2019, and despite being the strongest performing consumer foodservice channel in 2020, street stalls/kiosks continued to be negatively impacted in 2021 by the pandemic. Restrictions remained in place during the year in order to limit large gatherings of people, and many events, shows and markets were cancelled to prevent the spread of infection, which meant that fewer foodservice kiosks were needed.
Street stalls/kiosks saw a better performance in 2021 than in 2020 in Austria. For some companies, employees were back in the office in 2021, which created sales opportunities for nearby street stalls/kiosks.
The performance of street stalls/kiosks largely depends on the location of the outlets. Outlets which are at grocery retail locations saw a better performance in 2021.
Street stalls/kiosks is expected to witness stronger value growth in 2022 compared to 2021 and to continue to grow over the remainder of the forecast period, despite a gradual decrease in the number of units/outlets. Many small independent operators will have struggled to stay afloat during the pandemic, particularly if they were unable to establish partnerships with third party delivery platforms.
As office workers will continue to work from home more than they did before the pandemic, street stalls/kiosks serving the lunch crowd will see their market dwindle in the forecast period. Operators aimed at leisure or gourmet food are therefore likely to drive growth after the pandemic.
Street stalls/kiosks will remain very fragmented over the forecast period with the majority of players owning a marginal foodservice value share. The competitive landscape will remain dominated by independent operators.
