Compared with all other consumer foodservice channels, street stalls/kiosks was the least negatively impacted in current value terms in 2021, for several reasons. First of all, street stalls/kiosks are usually the cheapest option.
Previously, street stalls/kiosks were usually slow in adapting new technology, such as third party delivery services. Many such businesses are independent, owned by small families or individuals, and did not usually pay much attention to expanding their businesses.
After the many lockdown periods in 2020-2021, consumer foodservice operators had to rethink their strategies in terms of outlet expansion in order to manage their costs. Moving into street stalls/kiosks was one of the strategies used by many players.
Despite the rising rate of vaccination, new COVID-19 variants and continued disruption to the consumer foodservice industry are still a possibility in the forecast period. Many players in other consumer foodservice channels are looking at venturing into street stalls/kiosks to reduce overhead costs whilst still expanding their networks.
Besides quick and convenient service, affordability is one of the key advantages of street stalls/kiosks compared with other consumer foodservice channels. Low overhead costs, and the fact that the target group is usually mass market consumers, helps to keep prices low.
Street stalls/kiosks usually face concerns about their health and hygiene, due to foods being kept in the open amidst Vietnam’s hot and humid weather. Many sellers are also low-income and have low awareness of these matters, which sometimes give a bad impression to buyers.

Includes street stalls, street hawkers and foodservice kiosks where food is prepared in some way and served through a hatch or over a display counter to take away. Also includes kiosks and carts located externally or internally eg in shopping malls etc. As a rule, street stalls/kiosks outlets tend to be smaller than 100% home delivery/takeaway outlets, while menus are more limited, often (though certainly not always) with a greater emphasis on snack items, rather than full meals.
