Given the difficulties it has been facing in recent years, consumer foodservice managed to turn in a surprisingly good performance in 2023. Sales are admittedly still recovering from their pandemic lows, but to keep moving forward in the wake of the twin impact of the COVID-19 restrictions and the post-pandemic high inflation shows the strength of the consumer foodservice industry in the region. Further growth is expected in the coming years, albeit at gradually slowing rates.

The Michelin Guide’s arrival in Mexico is expected to boost the country's competitive environment in the coming years. Mexico has several restaurants on Latin America’s 50 Best Restaurants list, while Elena Reygadas, who has been recognised as The World’s Best Female Chef 2023, owns two restaurants in Mexico City. If some of them they pick up Michelin Stars this could boost gastronomic tourism and enhance the perception of Mexican cuisine globally.
Delivery apps, having received major impetus during the pandemic, continue to gain ground. However, in response to the high costs associated with delivery platforms, consumer foodservice brands are increasingly innovating by developing their own dedicated platforms for online ordering. Other service providers are also helping brands in the development of all aspects of delivery, enabling them to optimise costs and improve performance.
In October 2023, Colombia’s first IKEA store was opened in Bogotá. There are also plans for additional stores in Medellín and Cali. Alongside selling furniture and home goods, the Bogotá outlet, the biggest in South America, also has the distinctive IKEA self-service cafeteria. The further expansion of IKEA in Colombia is likely to influence and reshape the competitive landscape of self-service cafeterias.
Further modernisation of the industry is expected, with self-service terminals, improvements in operational systems and points of sale, new data marketing technologies, business intelligence and the integration of apps and websites. Restaurant automation and the adoption of strategies such as efficient dispatch, time measurement and logistics automation could improve communication with the customer and provide personalised interactions.
