One of the biggest challenges for food and drink companies, as well as their ingredient suppliers,  is how to meet consumer demand for more plant-based products while also meeting demands for sustainability. Many plant-based products do not have sustainable sources for their raw materials, forcing companies to innovate.

One good example of a company that is meeting these demands while being sustainable is Atomo coffee, which takes the volatile compounds of coffee, synthesizes them and makes a coffee-flavored beverage out of them. More companies will be forced to similarly innovate in this fashion in the future.
