Despite the rise in baking seen in 2020, the trend to switch to healthier alternatives of sugar will grow across the forecast period. Due to the outbreak of COVID-19, in 2020 consumers became more aware and mindful of their health, with focus given on dietary habits that provide nutrients to the body, and work to keep the immune system robust.
