More knowledge about international cuisines and new ethnic food products has brought attention to a broader variety of pulses that were not as well-known in previous years. Pulses are becoming more relevant to the average consumer thanks to the current trend of trying out new dishes and foods, both when visiting a restaurant and when cooking at home.
In addition to pulses being included in several international cuisines which are becoming more popular, more consumers are adopting vegetarian, vegan, or flexitarian diets, which will help the category to grow in the forecast period, as pulses are very convenient when it comes to reducing meat consumption. Because they are nutritious, in most cases rich in protein, pulses can act as a meat substitute in many recipes, making up for the lack of meat, either being consumed as they are, or using them in different dishes to make them more appealing.

Pulses
This category is limited to leguminous crops harvested only for dry grains, excluding crops harvested green for food (green peas, green bean, string beans, etc), which are considered to be vegetables and are included in other vegetables category. Also exclude those used mainly for the extraction of oil (eg soybeans) and those leguminous crops such as clover and alfalfa, which seeds are almost used exclusively for sowing purpose. This is the aggregation of dry beans, peas and other pulses.
