In 2020, there has been increasing demand for freshly baked bread and pastries, helping to drive the unpackaged baked goods category. Leading supermarket PX Mart and convenience stores 7-Eleven and Family Mart have all launched in-store bakeries, providing unpackaged bread and pastry products to consumers in an attempt to gain more value share in these categories.
Several famous Japanese bakery stores specialising in toast have been opening in Taiwan. Unlike regular plain toast sold in Taiwan, the fluffy white toast from Japan, also called “raw toast”, is noted for its natural ingredients and not containing additives.
Despite the fact that, traditionally, baked goods sold in Taiwan are high in fat and sugar, they remain popular. They are soft in consistence and also served warm, catering to consumer perceptions that warm baked goods are freshly made and of a high quality.
While foodservice sales of baked goods in Taiwan are experiencing a slight decline in 2020 owing to reduced footfall as consumers have spent less time outdoors, channel performance should show some improvement in 2021 and continue to make small gains throughout the forecast period. The larger retail channel is expected to show a similar dynamic but with slightly higher growth rates.
More health-orientated baked goods and harder bread are predicted to gain traction in Taiwan over the forecast period, supported by rising consumer-health-awareness, which has been strengthened further by the pandemic, and manufacturers’ efforts to stimulate demand. As a result, healthier bread, cakes and pastries, such as low-carbohydrate products using a variety of grains instead of white flour, will keep seeing rising demand.
Opening a cake or pastry shop has become a popular choice for young people looking to start their own business in Taiwan – and they are utilising social media for advertising and generating a following. There are more local small cake or pastry shops entering the market, with most emphasising their products’ exquisite taste and ingredients as premiumisation and exclusivity is highly welcomed by young consumers, young females in particular.
