The conference will be a pre-conference activity in association with the Texas Restaurant Show! Attendees will have the opportunity to hear from (and network with) top leaders from ghost kitchen, delivery, foodtech, and virtual brand industries…followed by two days checking out the latest and greatest in goods & services in the Texas Restaurant Show’s huge exhibit hall in the George Brown Convention Center (including the OnTrend Ghost Kitchen & Virtual Brand Pavilion).

Session title: The Evolution of Foodservice Delivery: Ghost Kitchens, Virtual Brands and Beyond
Session description: Spurred forward by the Covid-19 pandemic, food e-commerce and delivery have skyrocketed in recent years. This growth has increased competition for mealtime fulfillment as the lines between packaged food and prepared food, as well as retail and foodservice, have blurred. This competition has driven the commodification of foodservice, allowing for the growth of ghost kitchens and virtual brands and forcing players across retail and foodservice to reassess their business models. This presentation will look at the current state and future prospects of online food ordering, third-party delivery, ghost kitchens, and virtual brands. Using Euromonitor data, insight from consumer surveys, as well as relevant case studies this presentation will examine the evolution of foodservice and how consumer preferences will continue to shape meal fulfilment.
