Session description: During more than a two-year pandemic period, the food delivery market experienced unprecedented growth, becoming the mainstream of the consumer foodservice industry in South Korea, and in this context, ghost kitchen was also becoming a new trend in the global restaurant industry. However, in this early post-pandemic era, a negative outlook is expected in ghost kitchens as food delivery orders plunge as people return to in-person dining. However, amid the soaring inflation under growing uncertainty in the global economy, consumers are expected to come back to food delivery for several reasons such as convenience or grocery bills. Euromonitor compares the role of ghost kitchens based on global cases and examines how these cases can be benchmarked in South Korea.
