Sweet potatoes have always been a traditional part of American holidays such as Thanksgiving, but over the last 15 years they have grown to become a regular part of the diets of many consumers. A major reason behind this was the growing interest in fad diets such as the Atkins and Paleo diets, which promoted the consumption of sweet potatoes which are a natural and healthy alternative to sugar as well as being full of vitamins.
With regard to other roots and cassava the demand remains relatively niche in comparison to sweet potatoes and potatoes. While the latter are staples and are widely available the distribution of cassava and other roots is often limited to specialist food shops and ethnic markets.
