There was a surge in demand for sauces, dressings and condiments packaging during 2020, when COVID-19 restrictions saw consumers spending more time at home and preparing and eating more meals and snacks there, providing a significant boost to demand for these products. Cooking ingredients are the largest source of demand for packaging units in sauces, dressings and condiments, and demand for cooking ingredients packaging rose for the first time in a number of years during 2020, as consumers cooked more meals at home.
After cooking ingredients, table sauces is the biggest source of demand for packaging units in sauces, dressings and condiments. There was also a notable acceleration in the rate of growth in demand for table sauces packaging during 2020 and, while packaging unit volumes then declined in 2021, they were still well above pre-pandemic levels.
There was particularly strong growth in demand for soy sauces packaging and, to a lesser, extent, other table sauces packaging, during 2020, albeit from quite a low base. This boosted demand for glass bottles, which are the dominant pack type for both soy sauces and other table sauces, such as teriyaki sauce.
During the forecast period as a whole, demand for sauces, dressings and condiments packaging is set to decline slightly, following the sales spike seen in 2020 as well as generally positive performances in 2021 and 2022. After being almost forced to do a lot more home-cooking during the pandemic, particularly at times of spiking case numbers, consumers will relish the freedom to eat out again at foodservice establishments or on the go in the post-pandemic period, thus negatively impacting the demand for retail sales of sauces, dressings and condiments.
The packaging unit volumes of flexible aluminium/paper and folding cartons – the two main pack types – used in bouillon are expected to continue growing in 2022 as these products have been increasingly promoted as seasonings that enhance the flavour of food. However, the implementation of Resolución 810 2021, the so-called black seals regulation for products containing high levels of sodium, fat or sugar, is expected to have a negative impact on sales of bouillon.
