As most consumers are used to waiting staff and a full-service restaurant concept, the concept of self-service cafeterias is only popular amongst urban dwellers who are busy, have hectic schedules and operate under severe time constraints.
One of the main reasons why this channel is so small in India is the widespread availability of affordable labour. Generally, it is common to see more workers or waiting staff than is necessary in restaurants, with Indian consumers appreciating having someone to take care of their needs when having a meal.
