Self-service cafeterias continued to see current value growth in 2019, although this was due mainly to inflation, with a decline seen at constant 2019 prices. However, a continued rise was seen in outlet numbers, as traditional self-service cafeterias, called esnaf lokantasi, (literal translation trader’s restaurant) appeal to the working population.
Self-service cafeterias, especially independent outlets, offer a wide variety of local traditional menu items that appeal to nearly all Turkish consumers. The rise in the working population has increased the demand for such food options, as people have less time for cooking these traditional local dishes at home due to their decreasing amount of free time, especially in urban centres.
Although in 2019 the number of outlets continued to see slow growth, over the forecast period the effects of macroeconomic deterioration are expected to be more intensely felt. Many independent self-service cafeterias which are financially weak will need to increase prices to compensate for the increasing operational costs of their outlets.
In 2019, MAPA Mobilya ve Aksesuar continued to lead self-service cafeterias in terms of value sales, transaction volumes and outlet numbers with its Ikea Restaurant retail brand, although its share remained very low. The company opened one more outlet in both 2017 and 2018, but its outlet count remained static in 2019.
MAPA Mobilya ve Aksesuar’s only notable competitor in 2019 was Vapiano, which followed at a distance. However, it only accounted for negligible shares of value sales, outlet numbers and transaction volumes, as it only has one outlet left in the country.
As evident from the previous two points, in 2019 self-service cafeterias remained highly fragmented. The channel continued to be dominated by local independent cafeterias, traditionally called esnaf lokantasi.
