Street stalls/kiosks represent a popular option for the purchase of snacks on-the-go during the day. Most sell traditional products such as pretzels, bagels and pastries, but there is a rising trend for selling traditional Middle Eastern products which have growing popularity, such as kebabs.
Kiosks account for the majority of outlets in cities of all sizes, primarily because of their cheap offer and the strong tradition of consumption of the products they sell. Street stalls have more seasonal activity, mainly during warm weather, when they are located in summer resorts at the seaside and in leisure parks.
Street stalls/kiosks continued to be dominated by independent players in 2021. Chains were more dynamic, but the number of outlets is much lower because the products found in the offer of street stalls/kiosks have a low degree of sophistication, and the investment in building a chain is not always justified, especially in view of the competition from other budget options in the neighbourhood, such as limited-service restaurants.
The forecast period is expected to witness a return to normal life as vaccination progresses and COVID-19 eases. This will ensure a return to learning at school, working in the office and more people on the streets.
Fragmentation in street stalls/kiosks is expected to remain high, because investment in setting up and running an outlet is low, and previous experience is not required to operate such a business. These businesses are generally family-owned and can provide a decent living, which is the reason why outlet numbers will be on a growth trend throughout the forecast period.
Despite the continued dominance of independents, chains will continue to be more dynamic in street stalls/kiosks in the forecast period, and account for a rising share of sales over the course of the forecast period. These outlets have better locations, larger spaces and attractive and friendly designs.

Street Stalls/Kiosks
Small, sometimes mobile, foodservice providers characterised by a limited product offering and by low prices. Includes street stalls, street hawkers and foodservice kiosks where food is prepared in some way and served through a hatch or over a display counter to take away. Also includes kiosks and carts located externally or internally eg in shopping malls etc. As a rule, street stalls/kiosks outlets tend to be smaller than 100% home delivery/takeaway outlets, while menus are more limited, often (though certainly not always) with a greater emphasis on snack items, rather than full meals.
