Pizza full-service restaurants, Latin American full-service restaurants and North American full-service restaurants are expected to make a stronger recovery than other subcategories over the forecast period thanks to the fact that the offerings from players in these categories are more popular for home delivery and takeaway consumption.
In general, there is a marked tendency towards consumption of home-made food, in contrast to fast food, where frying predominates, and this trend is expected to continue over the forecast period. Restaurants are increasingly using ingredients that are organic and of ecological or of sustainable origin, in addition to being healthier, more natural and made in a traditional way.
