Sales of full-service restaurants are expected to grow over the forecast period, but at a lower rate as the years go by, reaching pre-pandemic levels in 2024. Likewise, it is expected that their value sales will continue to grow more than transactions.
Industry players have been cautious about opening new stores due to the difficult economic situation in the country. Most have been carefully analysing the options of store opening, always under the focus of profitability.
The incursion of technology has also contributed significantly to the development of full-service restaurants, not only in the implementation and promotion of digital sales to provide delivery service and facilitate orders through their own websites, apps or WhatsApp Business, they also integrate digital payment methods that include credit and debit cards and digital wallets such as Yape and Plin. However, technology has also contributed to implement software aimed at a better comprehensive management of businesses, which enables them to improve productivity and efficiency within their processes, especially in restaurant chains in this category.

Full-Service Restaurants
FSR (full-service restaurants) encompasses all sit-down establishments where the focus is on food rather than on drink. FSR is characterized by table service and a relatively higher quality of food compared to quick-service units. Menus offer multiple selections and may include breakfast, lunch and dinner. Preparation of food products is often complex and involves multiple steps. NOTE: restaurants types catalogued in this segment refer to table-service only (outlets with a proper “full table service:” wait staff attending customers and taking orders at the tables). Outlets with “limited table service” are excluded from FSR. For example: outlets where customers order their food at the counter are excluded (even though the waiter will then bring the food at the table).
